        The phyllo (although using pre-made sheets) definitely takes up more time than most conventional cheesecake crusts, but the result is excellent and the sugary, buttery walnut-pistachio mixture on top and bottom tastes fricking amazing as you can imagine. Recipe is fairly straightforward.

        Two notes:
        1) Don't overdo the orange blossom water, it's strong
        2) Since the top is going to be covered by another layer and phyllo ribbons on top, the batter won't get as much direct heat. You may want to do another 5-10 minutes for a firmer core consistency. Mine came out slightly gooey in the center but still stiff enough the cut. Just keep a close eye on it through the oven door
        3. The par-baking and docking of the bottom dough layer is very important, do not skip

      Every time I see this I want to try it, then I try one bite and remember that I have no fricking clue how anybody can eat this food. It's so sickeningly sweet and sticky and it barely matters what kind of nut they use because you can't tell what they are except texture anyways.

        You have full control to dial-in the amount of sugar in the batter, the nut mixture, and the finishing syrup (or simply reduce the amount/omit); why would that be an issue?
