      Use the correct kind of cheese, obviously. Not all cheeses melt the same. I guess you could also just use a cooking torch and use it to melt the cheese before you put the second piece of bread on, but it looks like you just need to get the right kind of cheese AND cook on a lower temperature so that the heat slowly grows and warms the interior up without immediately scorching the bread directly against the pan.

      Looks bretty good aside from the burnt, although me personally I might cook the onion and tomato a little right before filling the sandwich (in part because unironically the heat of the sautéed veggies will help melt the cheese).

      Put a lid over it. The heat trapped under the lid will melt the cheese. But be careful to long and the moisture will water log your bread.

      Did the lid trick. Attempt 2 is a success
