    If your steak is tough or dry when cooked past medium, it's low quality beef. Good quality beef can be juicy and tender even when cooked to well done. That's what the steak industry doesn't want you to know. They want you to think your low quality beef that gets dry and tough if fully cooked is actually somehow a sign of great quality and something you should pay a premium for. But it doesn't matter. Soon we'll have lab-grown steaks of perfect tenderness, juiciness, and flavor. They'll be cheap. You can cook them any way you want and they'll still taste great. And we won't have to kill cows for them. We'll have cows as friends.

        Some people will still have them. People still have horses even though automobiles mostly replaced them. We'll still keep some in zoos. And it would still be in the interest of companies to keep a smaller herd of cattle for research purposes and to keep a line of cells available in case stocks are ever lost. They won't disappear. And the ones still around will be happier.

            Is that a bad thing? They aren't all living great lives. And they're often stressed when finally slaughtered at a young age. I don't see this as something that needs to continue. A smaller amount of happy cows would be better.

    Low-grade and different cuts will definitely be chewy. I get some pretty lean grass-fed sirloin delivered, and I can really only enjoy it as breakfast, cut into slices and cooked hot and fast with eggs.

    There's plenty of higher grade, grain fed, and wagyu and wagyu-hybrids out there that are tender at nearly any temperature.
