Need ideas for peaches

I bought a bushel of peaches 5 days ago and they're starting to get ripe, I need ideas for what to do with them aside from eating as is or preserving.

    Ayo I did too op, but unlike you I have plans for them, gonna make some preserves, ice cream, cobbler, crumble, and peaches and cream.

    Blanch them for thirty seconds, shock them in ice water, peel the skin off easily, cut them in half, remove the pit, then slice/dice and freeze. Thaw them out to use in cobblers and whatnot. I know you said no preserving but when I had that many peaches I made peach jam and gave it away at Christmas.

      Tbh, that's probably what I'm going to have to do. Is there anything that frozen peaches do better than fresh?

        frozen works great for any baked goods or sauce. just keep in mind freezing breaks the cell walls so they will release a lot of liquid when thawed

            can them in syrup, but I can't say I'd recommend this over freezing or other methods of preserving.

            another idea is to make salsa or chutney with them. it's even possible to do this as a ferment (picrel)

        Literally nothing, it buttfricks the texture sideways before you even do anything to them.
        Only good for ice cream or smoothies after that, unless you like your baked goods with utterly broken down fruit like a shit grocery store then go for it.

          nahh you have it wrong, cooking them breaks them down similarly. anything being baked for a while like a cobbler, you wouldn't be able to tell the difference fresh vs frozen

            Destroying the cell walls of any plant before cooking will always break it down more than just cooking alone.

              mmm perhaps a negligible amount but either way making the sauce for cobbler cooks the frick out of them and the peaches end up very tender, if you're doing it properly

    Don't forget to chuck em in the freezer when they're close to too ripe then you can cook with em later or eat frozen as a snack. I think icecream wastes them, tbqh the extra sweetness overpowers the peach flavor. I'd highly rec some seared peach pancakes for breakfast though, OP 🙂

    I froze the ones I had extra the other day. Didn't try one yet. I only cut them in half and removed the pit. I intend to put them in yogurt or something like that.

    Aside from what’s been mentioned dried peaches are tasty. Also I’ve never tried it but grilling them seems to be a recent trend.

    make peach milk. freeze or chill the peaches. cut them up or blend them. add them to the milk or cream and bring to a scald (to infuse it). add sugar or honey or w/e maybe cinnamon or almond extract (after it cools). immersion blend or blender if you want a more uniform texture. refrigerate till it's cold or not.
