    i don't understand how people find this style of eggs appealing.
    i like my eggs pretty close to raw too, but when you make scrambled eggs like this it just turns into mush that looks and feels like baby food.

      Some stoves can go lower than others. It shouldn't really be relevant for that stainless saucepan, but a tinned copper saucepan conserves heat so efficiently that you only need about 1/20th of the heat output from your stove as if you were using a stainless pan, and sometimes the only way to get that is removing it from the heat.

      I think it's fine more in combination with other foods, but don't really understand the appeal of a half-cooked omelette, either. I actually like eggs to be fully cooked. As long as it's not overcooked, if you can get a little browning along the edges, that adds flavor.

    I like the Jacque Pepin method where you put 75% of the egg in the pan, cook it on low-medium heat, then add the rest with some cream to prevent it from over cooking

    Kind of the same thing essentially but less moronic looking
