What's the secret to over baked fries?
I tried some pan fried, they came out okay but I feel like oven bake fries will be even better.
I'm using beef tallow rendered from ground beef, and I tried making burgers at the same time, and while it worked (steam for 10 minutes to cook through, let drain and then shallow fry in rendered tallow) I wanted them even crispier and I think the oven is the way to go, but I hear the oven takes forever so I'd have to render the tallow ahead of time, so my new plan is to make something with my remaining ground beef (I'll probably just make an omelet with the beef in the middle) and save the tallow for fries another night.
I like to season my fries after cooking with salt, pepper, garlic and parsley.

Parboil for 4 minutes max, drain, dry, rub with cooking fat of your choice, 25 minutes at 400.

I parboil my potato sticks for a few minutes, dry them, then toss them in a bowl with EVOO and seasonings. I bake them at 425 for 40 minutes to get them really crispy.
Get a deep fryer.
Oil easily lasts 6 months if you are only doing fries.
Home breading/batter will fuck it up fastest, as will onion rings and chicken wings. You can get one with a built in filter though.

air fryers seem to fuck up potatoes for me every time, the skin puffs and becomes rubbery, I hate it. Only deep frying or over baking gives me the crisp skin that I desire.
