People are pointing out how the new stuff is kinda brown. I don't think it's a change in recipe though.

People are pointing out how the new stuff is kinda brown. I don't think it's a change in recipe though. Way before the shortage, I lost a bottle in a cabinet and found it years later and it looked exactly like the new stuff. Pretty sure they're just dumping old stock as new sauce.

The color's off because a good portion of the chilis didn't reach full maturity so there's too much green pigmentation, it's why they've halted production again.

        >ferment
anon, sriracha is just ketchup with chili powder.
there is no fermentation in the process.
the vinegar is just heinz white vinegar.
nobody made homemade vinegar for it.

That's just plain stupid, ketchup is pretty much based on tomatos and there's no tomatos in sriracha it's based on chile peppers. Look here

Because that's part of what makes it sriracha, why do you think?

Vietnamese restaurants aren't actually putting wiener sauce in the bottles, they buy the cheapest sriracha and refill the bottles, yet no one can tell the difference.

It literally is different. Most people know the chili supplier cut him off and is making their own. Pic rel has been my go to for years since it doesn't have preservatives

i watched a video recently about how its not the recipe that changed but the peppers used. I uguess they used to buy from the same guy then something happened and they like outsourced it even though they had a contract with that guy. I cant remember exactly all the details butyeah pretty much its the source of the peppers used changed.

There is no sriracha shortage. It's a Huy Fong shortage, and nobody cares because better sriracha is commonly available now. They played themselves.

Huy Fong sriracha isn't good anyway. There's a very distinct chemical taste to it.

I think the whole screwing over Underwood Farms (their pepper supplier) happened after the kids took over.

        >everyone talking about huy fong siracha shortages
        >Nobody talking about their sambal, still haven't found a similar replacement so I stockpile whenever I can find it

I think Underwood makes sambal but you probably have to order it online if you live outside of cali
