It was super cheap, and I don't really know what to do with it. Suggestions?

      Osso buco is veal.

      Anyway, I agree with the general concept. Slow braise it till it falls apart, and serve it on a risoni/wild rice mix.

    put it in a pot with cold water
    add some vegetables and onion.
    als garlic and some spices as you wish
    put on oven on lowest heat for 6 hours
    filter trough a towl and you got some good stock

          Add some fermented cabbage and turn it into Bigosch/Krauttopf.
          Trust me on this one, fresh cabbage and fermented cabbage together with some slow cooked meat are insane

    Basically anything you can stew those puppies in for about 3-4 hours. Osso Buco, curry, goulash, etc.
