    You can do 2 things- cook it in the pan youve got, and cook it for less time, or increase the proportion of the recipe to give you a 10 inch cake that will be as tall as the 9 inch is supposed to be. Youll have to figure out the math on that (not hard) and cook it for slightly longer. I recommend using a food thermometer

    Multiply your ingredients by 1.25
    So if it calls for 4 eggs use 5 or a cup of sugar use a cup and a quarter.

          It came out alright. Not bad but I don't think I would do it again. It's going to take me a while to finish, it's massive. I enjoy baking but I hate having to eat everything myself. One day I want a family to share it with.

        I followed the directions to the T. I agree it's really not the most appetizing looking cheesecake I've made. I'll know more tomorrow once it's done and I take a bite.

        Sort of. The thing of water was in the rack below the cheesecake. So it was an inch above. I think one cheesecake recipe I did called for that so that's what I've done for all of them. I need a better pan because I'm too worred water will leak through the bottom.

    And the cross-section. It was a tad gooey in the center, probably in part because the whole top was covered so received less direct heat, but honestly that may have even been an improvement.
    Batter was 50:50 cream cheese and drained ricotta, with the usual eggs n sugar and such, plus some orange blossom water
    Will definitely make again. Used a Cooking with Zahra recipe.
