the only way to frick up a quesadilla is to burn it or to soak it in oil so just don't do those things

I call them kweh-suh-dillas because that's what my grandpa called them because he would mispronounce things on purpose to piss my autistic dad off

My wife does that! She calls them quay-so-dillos, rhymes with armadillos. She does it because she knows it annoys me. And her ancestors came from Spain, too!

no point in using 2 tortillas. just fry one and fold it in half

This is truth. I made chicken quesadillas recently and I was doing them two-faced like you are. It not only took longer but the tortillas were harder to get to the desired doneness/crispiness.

toast one side of the two tortillas, throw the chese in the toasted side, toast outsides while it cooks, then cut into triangles like a pizza and eat like totopos with some beans. Also you're not supposed to fry the tortilla

Why don’t you fry it? How do you get the tortilla to not stick without using butter/oil

          Anonymous

Move it around the pan and use medium heat, there really should be no reason for it to stick in the first place

every quesadilla I've ever had in a restaurant was definitely buttered before frying

likely using corn tortillas. they don't stick as much and are suited for dry heating

When you try to fold a corn tortilla in half it’ll just break. Quesadillas can only be made with flour

not true. that only happens with raw ones. corn tortillas come raw and must be heated first

dillas are probably the best tasting to easiest cooking ratio. i made one yesterday with diced grilled chicken, sauteed onions and green pep and cheese. then put some sour cream and hot sauce on it, it was fantastic!

Sounds good. What kind of cheese do you use. People usually go for cheddar but I’m thinking of trying pepper jack or perhaps munster

        Anonymous

NTA but I use a 50/50 mix of monterey jack and cheddar. Nothing fancy, just supermarket cheese bought as blocks and grated on a box grater. Works great.

i used a pre shredded mexican blend, cheddar, jack, asadero, something else. if im making a full meal ill shred lettuce and dice tomatoes and put it on top with the sour cream and salsa

    >thread full of people saying they use butter and oil so the quesadilla doesn’t stick
    What are you people DOING
How is your quesadilla sticking, do it at medium high heat and flip
    Am I being rused

It's not for sticking they don't stick, you use butter to fry up the crust so it gets crispy and flavorful. I've never eaten a quesadilla at any restaurant that didn't use butter or oil.

Fat greasy dillas are good, at times. They're just that, tho. Greasy fat fried fricking messes. Like a beaner mozzarella stick.

          Anonymous

You don't have to drown them, just a tiny bit of butter or lard is enough. You just want a bit of crisp.

            Anonymous

I agree. You can get a crisp without any of that, tho. So long as you're patient. You want a grease fry flavor. No? They're both valid.

I grew up with a beaner family that always used butter or lard or w.e to fry them. I dated a beaner chick fresh from Mexico and she taught me that none of that was needed. It honestly tastes better with no oils or fats or w.e. corn or flour. Nothing should ever stick. Even if you cook it on the hood of a 1994 Toyota corolla.. its fine. Just gotta warm, melt, fold.. or double stack tostada style.

well, fully raw would be liquid sure. by raw I just mean they require more cooking after coming out the bag

I suppose you could be correct. I've always seen them as fully cooked and just fine, but anything I've ever done with them requires cooking. Like tortilla & egg, dillas, tostadas, w.e Frick me.. You've blown my mind. (Talking corn, anyway.) A lot of commeecially available flour is just a glorified shit tier wrap vehicle.
