      nice roll, beautiful color. jalapanos should always be chopped in tiny pieces otherwise they're disgusting. of course mexicans are too lazy to do that in cheap restaurants but you should definitely do it at home

      yeah these 'paños are a lot hotter than, say, the Subway ones, so it's kind of a booby trap. I'm surviving though

      you got that right! I'm Boston from the land of grindahs, and where I live now on the other side of the planet you cannot get grindahs or hoagies or subs anywhere. I have to make my own hot relish because it doesn't exist. It took me ages to find provolone and it cost me $13.

      This sandwhich cost me a fortune in ingredients and took a long time to actually put together, but it's because I haven't had a proper Italian Grinder in 7.5 years. And that's why I took some frickin' photos.

    You have a good amount of meat, both in quantity and variety. Your presentation is decent but the obvious discrepancy in size from the middle to the ends makes for less desirable bites. Jalapeños and hot relish don't necessarily go with that style of meat (an otherwise Italian combination) but that's more of a preference so I'll let it slide. Overall a good hoagie.

        yeah its a beauty but that was also what was missing to me. a salted the tomato leeches out tomato water and then that mixes with the vinegar, pickling brine (banana pepper rings for me) and the mayo to form a really special drippy sandwich sauce that only a sandwich can naturally form

      I agree, but I didn't want to leave anyone out. It's easy to overdo it with the meat. I almost couldn't close the sandwich, i had to roll it up in parchment and compress it together, and let it sit in the fridge a few hours to relax. I was chuffed to see it really took a solid form and holds together nicely at least.

      I do 50% sweet peppers, 50% jalapenos and habaneros, finely dice in the chopper with a 1 garlic clove (this is optional but if you hide a garlic in there it really lifts it without tasting like you added garlic). Salt and some white vinegar, simmer until it's thicc and don't eat until it's had enough time to cool in the refrigerator.
