      When they say carbonara doesn't use cream what they mean is if you know what you're doing you can make a creamy sauce without using cream. In your case I think it would be better if you add some cream.

      he didn't use enough pasta water and possibly not enough cheese. my first carbonaras looked like that too. about 30 grams of pecorino per person are ideal and the egg shouldn't be too small otherwise you need 2 egg yolks if you make it for yourself

    Ok im leaving this group .i thought you guys were about loving carbonara but your not. Everyone i have talked to has belittled carbonara and treated them with such disrespect.     ok Culinaly what do you think about this idea I had? carbonara is basically a sauce made out of egg with cheese and cured pork that you eat with pasta. if you replace the pasta with potato that's all things you eat for breakfast. what if you made breakfast carbonara following the usual steps, but instead of hot pasta you used hot hash browns? to be honest I tried it once and it was not as good as I imagined. it ended up too greasy, but maybe that was my mistake frying the hash browns.
