          there's nothing stopping people from just throwing fish in a package that was never flash frozen or even frozen at all. Temp wasn't low enough? package it. Flash freezer completely broke for 2 hours? package all of it. people get worms all the time from products that were by law required to be flash frozen. there is no safety net in capitalism. the safety net is minimum wage workers.

      Yes, BUT for it to kill parasites it needs to be done for a longer duration at a lower temp than most people do

      So you get the distinction of sushi grade (madeup thing) but it basically means frozen at the correct temp for right time

      Since this is farmed doesn’t matter

      Also, many smaller fisherman sell their stuff to locals near coast and it is 100% not frozen

    I tell people this all the time, all you have to do is make sure you get farmed salmon from a reputable source which in my area is actually much cheaper than wild salmon. Do you cold water defrost it?

            Maybe I'm retard other anon but I read the japs would only use sea fish for sashimi because they're not supposed to have parasites or something but river fish do. And the thing with salmon is when they migrate to other waters they go through rivers where they pick up parasites so by having them in in farms since they never leave the salt water they don't pick up any. So even the 30 euro piece of sushi you get at a world class restaurant will have the farmed version. I'm not saying the ocean doesn't have parasites all I'm saying is if you catch a river fish and eat it on the spot you might have a really bad time, but doing the same with an ocean fish you'll probably be good. I have eaten farmed raw salmon many times and never gotten sick. I don't even know if my country has the "sushi grade" label.

              I think you're mostly correct in that there are much more human transmissible parasites in fresher waters after some digging. the chance isn't zero from ocean fish but it seems to be significantly less.
