    Michelin stars also take into account the restaurant's ambiance, the wait staff, the presentation, the chef's reputation, etc. It's not entirely about the quality of the food itself. Remember the entire system was created by the tire company to encourage travel so people would need to buy more tires. Every major coastal city will have great sushi restaurants, stars be damned. The further you stray from them, the less likely it is to be good.
