    >not saving delicious, healthy tallow to cook with later

The shit that comes out of ground beef is not tallow. It's a mixture of water, fat and butcher shop floor scrapings that are intended as filler to the cheap meat product. When you pour it off, and even when you rinse your ground beef with fresh water, you remove some of the strong, nasty odor imparted to your food by that low quality pink slime.

        >butcher shop floor scrapings
It's collagen and connective tissue, part of the reason why we ground meat chads look 10 years younger. Remember kids, twice a week, rosy cheek.

What do you do with the grease? When I leave it in the beef is too soggy. When I cook till it's gone the beef is too crunchy

If a recipe told me to discard BACON grease, I'd question it. I mean, that's a decision you should leave up to the chef.

You don't rinse. You dump it in a sieve and give it a few shakes over the sink.

Yeah I never remove the fat and grease when I make tacos or soup or just about anything. Fat is where all the flavor is. As long as you eat grass-fed, organic beef the fats are not bad for you.
