Yes. That exact one makes excellent rice. The kamado-san donabe. 3 go(1go=3/4 cup) size is good for 2-3 people, and is sort of the standard size I recommend.
If hot pot dishes where you add meat and veggies to rice sounds like a good meal they work great for that.
If you love short grain rice it is the absolute best way to cook rice. Better than a metal pot.
Last thing is they should only be used on gas burners.

If you're being serious, induction burners only work with magnetic materials, which a clay pot is not.
No. You can get a little gas burner to use with it. That's what I do. The gas cans aren't too expensive.

One place where a donabe truly excels is preparing short grain rice for sushi. I have sushi nights with my friends once or twice a month, and have gotten reasonably good at making nigiri. It's harder than it looks to get the proportions and small details right. Everyone I have shared my rice with is amazed at how good it is. 🙂

Look at how each grain of rice is glossy, but not wet looking. The grain has not burst like in the rice cooker rice. Objectively better rice.
The other thing that you do not understand is that a donabe allows you exact control over every aspect of cooking rice. The best short grain rice does not cook well in a rice cooker because it needs precise control over soak time, cook time, water ratio. The effect of a thick walled ceramic cooks the rice more gently, and the way heat convection moves the rice in a donabe is superior to a rice cooker.

Yes lol. It is important to use filtered water, and normally I charcoal filter my water before cooking rice. This time I forgot, so I put the piece of charcoal in the cooker along with the rice. Works almost as well.

I just put in equal amounts of rice and water in the instant pot and 15 minutes later it's done perfect every time. Cooking rice is not hard anything can do it.
Making perfectly edible rice is not difficult. Cooking extremely high quality rice to its fullest potential took me some time to learn.
Many many people will tell you that instant pot rice is not good also.

It's a very niche tool that will likely result in a better end product when used to make traditional Japanese meals that require a donabe.

Yes you can. Both in a donabe and rice cooker, but it will not make the crispy bottom, which adds flavor, aroma, and texture to the final dish.
I think you could do it like that but with much better crust if you used a carbon steel pan. it reminded me of this alex video where he basically did the same thing with paella.
you'd just have to leave out the saffron and do it asian style instead. either by cooking the rice in stock or like in the first video. the main goal is the same. that crispy rice at the bottom. I wouldn't be surprised if carbon steel pans were actually better than clay pots because the much bigger bottom means more socarrat
If all you were going for was maximum crispy bottom, yes, but I don't think it's the right balance for asian style clay pot dishes. I also think that steaming the contents plays a role for the asian version.
Would be pretty interesting to try an asian style paella.
I was thinking about a smaller 20cm-24cm carbon steel pan with a lid to steam the meat. there are tall carbon steel pans as well so you could add more rice if you wanted more white rice and less socarrat
But then you're just replacing a donabe with a cs pan. A good donabe has extreme heat retention. Think mine is over 1 cm thick all around.
To make a good crust using a donabe you just give it an extra minute or two on low.
10 mins high, 10 mins low, 10 mins heat off rest. For crust you would do like 12-14 mins on low.

carbon steel pans are 2.5mm to 3mm thick and retain heat very well. I don't think you need any more than this for clay pot rice. what for? it works perfectly for paella
The gentle swings in temperature are good for cooking short grain rice. It also keeps the rice hot for a very long time.
I have a tank-like 24cm stainless steel pan that is over 5mm thick all around and has perfect heat retention and distribution. Now I'm curious how pot rice would turn out in that but I have a feeling it would take a ton of practice to get it right without sticking
A thin layer will usually be somewhat crispy at the bottom of donabe cooked rice, and it is kinda stuck to the bottom.
I bet it would work well if your lid is good.

Just swinging by to say that Zojirushi rice cookers 100% make better rice than a donabe. I have both and a donabe vs zoji is kind of like a matcha whisk vs a milk frother. One is ceremonial and about the "experience" while the other is about getting perfect results every time. Kind of embarassed to admit I even own a donabe after reading this thread to be honest.

Found it in the archives. Might as well post it. I highly recommend using filtered or bottled water that has a neutral to sweet taste. This recipe is only for short grain rice also.
1.Measure rice by weight (ex. 450g)
2.rinse rice 4-6 times.
3. Drain as much water from it as possible.
3. Weigh rice again. (Will weigh more. 500g for example)
4. Add water until the new weight is 1:1.(900g total weight, or 400g of additional water)
5.Add rice and water to heavy bottomed pot.
6.Let rice soak for 30 minutes.
7. Cover, Turn heat on high, set timer.
8.When it begins boiling turn heat to low, and continue cooking for however long it took to get to boil.
9.remove from heat and rest 10 minutes covered.

Japanese clay has a different porous structure and mineral composition that contributes to how the rice cooks and tastes. You have to use Japanese clay to cook rice properly AND it has to be from the Tokoname region. A Donabe made with clay from anywhere else in Japan isn't worth using.
I bought the clay pot developed for the rice I wanted to cook well. The price of the donabe is not marked up for the US market. The producer doesn't even ship to the US.
The Kumoi kiln donabe has a very interesting history and I consider it a piece of functional art. The price is of no concern to me.
Maybe I will grab a local one to compare. Could be fun and interesting.
