Don't want to spoil it for you, but it's all muscle. Round might have the most muscular connective tissues since it's from the hip of the cow and obviously it has to walk, which is usually why it's just ground instead of made into steaks.
Ribs are certainly in that category of meat that requires a long cook process to make both edible and delicious. It's certainly not a cut of meat that generates a perfectly cooked meat in under 30 min like a steak or something. But ribs have decent fat content and flavor compared to leaner cuts, and beef ribs especially are something special when done right. Pork ribs also are just a delight when smoked right.
Pork ribs really only have one right way to cook them - and that is smoked. Beef ribs though have not just smoking, but you can braise and grill and do all sorts of other things with them depending on how they were cut.
But I do agree - they are overpriced as fuck considering the bone-meat ratio because of all the hype and shit.
Idk man, I think they're good but my wife loves them. Any time I make ribs I get my dick sucked so good it feels like every bone leaves my body through my urethra. I just smoke them until they're about as tender as a really tender steak, not like fall off the bone tender. I rub them with a dry rub prior to cooking and paint on the homemade barbecue sauce twice on each side and hour and a half before removing them with 15 minutes between applications.
