I think Runza is just the family name that started the chain. My family makes these once a year around the holidays and we call them bierocks too. Super simple, just ground up beef chuck or roast, onions and cabbage, salt and pepper. Goes well with a nice veggie soup.

Been making these at home recently because east coast and I'm trying to find a way to make the filling less dry. I do the onions, cabbage, and beef and my bread is getting better but i need a sauce or something to put with the beef so it packs more of a punch.
I just used the first recipe i found and it works just fine. Even the way I've made them already are still pretty good.

Simmer the beef in a jous instead of just pan cooking it.
I ate there once while traveling and it was awful.
I mean I couldn't even finish the sandwich, I had to throw it away.
Is their quality that bad across the board or did I just happen to stop at a location that sucked?
