        Are they all crispy? Pic looks like the perfect time to sprinkle a little bit of Old Bay over 'em and throw them back in the oven for another 10-15m

          I think if I had let them cool they would have mostly crisped up but I just couldn't hold back. Ive never had old bay, what does it taste like? It looks a little sawdust-y to me

            It's a spice blend (mostly celery salt, paprika, red/black pepper, maybe some mustard and other stuff) that's popular in the mid-atlantic states. It's normally used on seafood, but I think it's great on potatoes, corn, and chicken as well. Some cultists have even brewed beer with it (and it made the best darn beer-can chicken I ever made)
            Might be worth picking up a tin if you can find it; you can throw it on pretty much anything

              Ill look into it. I have a lot of spices as is, maybe I'll just get some powdered celery

              I have some mrs dash I want to try and put through my spice grinder and use on future batches

    Mostly they don't seem crispy enough. But they still look quite toothsome, as your teeth sink into tasty fried potato thins.

      Please do not spread disinformation. The ones that had a moment to cool off did in fact get crispy. They were a lot more browned on the other side. The onrs that weren't all the way crispy were also very good. Crispy exterior, soft flaky but not too soft or flaky interior. Delicious.

        What's the baking sheet setup? Just pan-paper-potato? A wire rack to get some air underneath the spuds might help with getting a more even crisp.
