    Eggs bhurji.

    Saute diced onions in a pan until translucent. Add diced jalapeno. Add grated ginger and garlic. Add cumin and turmeric. Cook just until the spices toast a bit (30s or so) and don't burn the garlic. Add diced tomatoes. Cook until the tomatoes have lost some of their water (sometimes you can see the oil in the pan come back out a little. Add scrambled eggs, salt and pepper to taste. Cook stirring gently until eggs are finished. Finish with cilantro and green onions.

    Yes, there's a lot of ingredients, but the recipe does fine if you leave some out.

      We'll be having sliced omelette as part of lunch tomorrow since it's been unseasonably warm lately.
      Bibimmyeon made with buckwheat noodles and with the following toppings: sliced omelette, sauteed red cabbage, sauteed spinach, sauteed carrot, blue-cooked cabbage and kochujang sauce (kochujang + sesame + water until thin enough for pouring). So try something like that.
      Alternately, my ex is a southern nigress who loved cheese eggs. It's literally just scrambled eggs with American and cheddar cheeses stirred into the still-hot curds. Loved that shit on bacon grits.
      A final suggestion is something like but with more Western ingredients; crumble cook some uncased sausage, remove the cooked bits from the pan and scramble the eggs in the rendered fat, readding the meat once the eggs are set. Also cheese.

    Make them the europoor way, that is, butter and only roughly stirred. Scrambled eggs get boring when they are homogenous diner-tier slop. You want to have distinct yolk and white pieces. Sprinkle of salt, maybe some green onion. This will reignite your love for scrambled egg.

      My eggs smell and taste better when I add a ton of salt and pepper as I scramble them in the bowl . A small pinch of smoked paprika has been nice.

    Worst egg style there is. Don't fricking scramble them. Put sunnyside ups on other stuff like breads, rice, noodles, steaks, or porkchops.

    Or eat soft boiled eggs. Sprinkle in some salt and finely ground pepper and enjoy that umami richness. Slice up bread of your choice, toast it, and dunk it in.

          I was trying to figure out what Anon would use instead of an egg cup to hold them. I suppose one could use an old jar of baby food.     Simple and good > interesting and mid. You can make creamy delicious scrambled eggs with medium high heat, olive oil, butter, salt, and remove heat the second they solidify letting them finish in the pan.
    If that's too plain for your preferences, serve a salty meat on the side and have each bite of eggs with some meat.
    I also love to top my eggs with some Yellowbird serrano green sauce for a tangy and satisfying flavor.
