        idk I'd rather make crispy potato cubes with it. cubing them and then boiling in a baking soda+salt bath and then tossing in fat and roasting makes for excellent crispy potato cubes

            it's different from a baked potato though because of the boiling in alkaline solution. it produces a nice crust of potato mash and substantially more crispiness than any other method of potato cube roasting.

      Man, what? I've been pulling from the same jar that I've kept and occasionally refilled for like two years now. Works perfect for frying some eggs or making cornbread. It just sits on the counter next to the stove.

      no it doesn't bacon fat is shelf stable.

      I cook up 2 to 4 pounds every couple of months, strain the fat in to pic related.

      leave it covered on the stove and use it almost every morning. it has never gone rancid.

      o_0 I keep all my bacon fat in the fridge and it might be months before I use it (I use chicken fat instead now) and it's perfect for me. You're def doing something wrong here. Maybe there's still water in urs?

    Super fricking overrated
    It's always too damn salty and smokey. Occasionally it's useful, I do enjoy throwing some on asparagus before roasting it, but not enough to save it.
