so Ii was making mashed potatoes and meatballs and I was wondering..is there a dish where you combine mashed potatoes and egg? I feel like it would either be really good or not work for some reason. Thoughts? I can't really afford to experiment if it's a bad idea.

      We make mashed potato casserole where I'm from.

      , we also make croquettes. My favorite is the one with cheese in the middle but tuna ones are common, too. So are ham.

        This is actually the first multi step thing I ever cooked without parental supervision and the first time I fried anything at all.
        I peeled, boiled, mashed and seasoned the potatoes myself. I mixed the egg and flour and turned the croquettes myself. I powdered the bread into crumbs and rolled the croquettes in them myself. I heated the frying oil myself. And I fried, drained and cooled them myself. I was 8 or 9. My parents were quite cross with me when they got home.
        Well, it was either this or corn chowder. I can't remember which of the two I cooked without supervision first, but the croquettes were definitely the first thing I ever deep fried and I was definitely 9 or under when I did

      nice. I was beat for using anything in the kitchen lol so I'm learning now at 30, I can make basic stuff and follow recipes easily enough.

    Yes, I like to add an egg or two to leftover mashed potatoes a bit flour and some seasoning and cheese (last time I used old bay and cheddar), form them into patties and fry in some butter.

      hey these are good too but maybe iffy for a beginner. you'll wanna push your potatoes through a sieve so they're nice and smooth, and add milk or cream until they're just on the loose side. separate a couple of egg yolks and stir them into the potatoes once they have cooled a bit, you want them hot but not so hot the yolks cook on contact. the eggs will cook as they come up to temp and the potatoes will thicken a bit. they brulee really nicely if you want to be a wanker. they're extra special if you salt them with microplaned pecorino instead of salt, too
