    I usually just ask for extra spicy which in restaurant terms means another scoop of cayenne powder in the dish. Thai restaurants are good about it and also have actually spicy condiments are the table so if I want spicy food it's usually Indian or Thai.

      My local Indian is usually pretty good, but the one time I asked for an extra hot curry they just dumped jalapeno slices in it. Why would they even have jalapenos?

        I've been to a few Indian places where some of the staff were clearly the autistic family members of the owner and didn't have cooking or social skills. They probably panicked and dumped the only thing they knew was spicy into the only dish that they were trusted to make.

    for most people the usual table hot sauces(franks, tabasco,valentina,crystal etc) are plenty spicy
    i took over the kitchen at this beach bar, had to unfrick the menu/staff and basically all we kept was a couple of the sauces, a pretty mild verde, a franks-esque vinegar sauce with a ton of chipotle and worcestershire that was actually very nice, and then the one that we used for when people wanted something extra hot, which was basically just pickled birds eyes with a bit of garlic
    switched the pickled birds eyes to actually fermenting them, it was pretty tasty and hot enough that most people didnt ask for anything hotter except for the occasional reddit capsaicin queers wanting le suicide wings
