Sorbets work best when you need something to bring out the natural acidity of the fruits for the more refreshing taste. The classical "fruits of the forest" berry mixture is the best imo, followed by the orange and lemon based ones.
Sorbet is delightful and refreshing in summer. Ice cream is good too, but it's not as good on its own like sorbet. Ice cream needs toppings or a cone, or to be served alongside warm apple pies and cakes.
Personally when checking out the parlor I always start with cream or vanilla option. Cream tells you about the quality of the milk used and vanilla tells you if they they are cutting corners on the flavourings.
