This is the amount of grease left over after cooking 2 quarter pound beef patties (made from 80/20 ground beef). Is this normal? They were practically being deep fried in their own grease, and I can't even take the lid off the skillet because of all the molten hot droplets flying everywhere.

      Sometimes I put the lid on off-center just a little bit so the steam can escape. But maybe it's too slow.

      Is 80/20 okay for cheeseburgers? I guess I could try using extra lean next time.
      And they turned out pretty good, but not perfect.

      Did you seriously use a metal spatula on a non stick pan? But a gas grill at the big box store, they are very cheap and won't create cooking fumes in the kitchen.

      Unfortunately I don't have a rubber spatula, so I just use the metal one very, VERY gently.

        Leaner meat means less fat content so it’s not going to be as juicy as a fattier burger but will have a meatier taste. Personally I stick with 85/15 as I think it’s a great all around cut for almost anything.

    Beef should deep fry in its own fat, at least the bottom layer should

    Yes that's normal. Restaurants use a scraper to get excess fat into their griddle's grease traps and its also why cooking burgers on grill grates result in many flareups.

    Is it grass-fed beef? If so, make sure you ingest the grease. Or save it for cooking with later. Filter it through a paper towel into a measuring cup. Best source of fat/oil.
