                It's not tho, the one I buy is better than the "fresh" Chinese bulbs they sell around here. It's not even fair to be honest. If I can get actual freshly grown bulbs, I can't notice any difference, not in the final dish at least.

      Preserved garlic can harbor botulism so they have to pasteurize it, acidify it and/or salt it heavily. It ruins the flavor. It comes out like soggy onion.

      Freshly chopped garlic has a very different flavor, once you chop the garlic the living cells start releasing allicin and other sulfur compounds, which you want in their original form, not decayed into something else. A garlic rub into meat or garlic infused oil for frying isn't bad, but if you overcook it it goes bitter. I usually add mine fresh as a dish cools.

    I use a little manual food processor and chuck pre-packaged garlic cloves in there with a sprinkle of salt and let it do its thing. So much better

    Cheap, convenient, fast, keeps your hands from smelling like garlic. REEEE all you want but you spergs aren’t Michelin chefs and 99% of the time it doesn’t slightly matter and no one begins to care if dumped some of this into a pan instead of spending however long fricking with chopping garlic clove. Feel free to cope and lash out, I’m not saying it’s superior or ideal optimum anything, I’m just saying it makes sense.

      my grocery store sells a thing of prepeeled garlic cloves, i just keep it in the freezer. it's not as potent as fresh but it's easy enough to just add more and the ice crystals make it easy to mush into paste.

      garlic paste in a tube is the superior product and is in fact even more convenient because you can squeeze it straight out instead of using a spoon
