I'm also new to wine pairings heh. I just googled what goes well with schnitzel. Sounds like grüner and riesling are the usual choices for white, but I drink plenty of riesling and wanted to try something new. The bottle I got is Austrian, and has that cool little seal on the top, pic related.

I made creamy pasta with oyster mushrooms today and although I only added the mushrooms for like a minute at the end the creamy sauce completely dominated the mushrooms. it was the same with beef bourguignon.
I'm starting to wonder if mushrooms are always better without sauce
My mushrooms were fine in the schnitzel sauce, but they still had some crunch in the soup. In the future, I'll be sure to throw the shrooms in before the onions.
I'm still new to cooking, so I may be talking out of my ass, but I'd recommend adding the shrooms way earlier when making your sauce, that way the flavor will bleed out and blend with the other flavors.
if you add the mushrooms early and do something like a stew like beef bourguignon the mushrooms either become mush or completely pulverized.
I'm not 100% sure how to handle this either yet so I just add like 1 or 2 small mushrooms early for sauce flavor and saute all the other mushrooms separately along with carrots because the flavor is so much better.
pan fried oyster mushrooms are god tier, they're nothing like bland champignons

A beaujolais. I tried to stagger the soup and schnitzel so I could serve a grüner veltliner with the schnitzel, but the timing didn't work out.
I wish I had made a different type of soup, the mushroom soup and jägerschnitzel are similarly colored, but thanks for the complement.
