I make Thai curry of various descriptions all the time, yellow, red, massaman. It's fast and tasty, and you can easily make variants by changing the vegetables, adding nuts or tofu, etc., so it never gets boring.

If I were vegan, I'd predominantly eat Indian food. It's a culture that has had a very large vegan population for centuries. You'd think they'd figure out a few good vegan recipes over the years.

Just do a tomato based stew with beans or chick peas with a side of rice, pasta or bread. No need to go crazy with the spices if you make it more european style with oregano or fennel

Making dal up for the next couple of days lads

      Fry onion
      Fry mushroom
      Add garlic and ginger paste
Stir in a load of spices
      Add stock
      Add tomato purée
      Add coconut milk
      Add lentils
      Simmer until lentils are cooked
Add spinach, splash of lemon, serve

debated amongst vegan; most of them just take "no animal products, at all" approach because it's a no brainer but imo there are some practices that can make honey ethical and also beneficial for the environment

yeah, correct, but I don't know the boundaries well between vegan, vegetarian, etc. All I know is at least some of them will refuse to eat eggs for example, since they argue there could be life in there

Cows are sacred animals in Hinduism eating beef is forbidden

apparently some of them don't eat any animal product that isn't derived from milk, so no meat of any animal period, and no eggs

Some Indians (Jains) don't eat garlic or onions, because eating roots kills the plant. Some Indians don't eat onions or garlic because they taamsic and promote feelings of heat, anger and lust. Some Indians don't eat any vegetables that come from the soil, because they are high class people and only poors eat dirt vegetables.
Yes indeed, India is a silly, silly place.
OP: I like to make Chilla sometimes. It is a vegan omelette that uses chickpea flour batter instead of eggs. Very tasty and healthy.

Silly, really. A lot of the spice combinations they like to use work very well to enhance beef. I've been trying out a lot of Indian recipes and dishes and combining them with various cuts of beef and some of them are amazing.

Vegans don't, but I eat eggs. I'm a vegetarian because I had stomach cancer and a lot of food just grosses me out, but eggs go down fairly well.

Some do. Lacto-vegetarian is the term for one who only consumes milk if you want to be more specific. Lacto-ovo-vegetarian is the term for one who consumes milk and eggs. Vegan is (mostly) no animal products at all.

what to do you substitute the meat with? mushrooms? I know proper vegans use TVP, soy curls and such but I've never got around using them (can't be bothered ordering them online + they look like an hard ingredient to employ)

Saltines with franks red hot sauce
Tortilla chips with salsa and franks red hot sauce
    prepackaged granola bars
rice soaked in a used baking sheet that previously held oily or greasy food, the rice is partially boiled while in the baking sheet on the stove elements before being transferred and properly boiled in a sauce pan
    ice cream
sunny side up eggs with mustard
literally any processed slop counts as vegetarian if it doesn’t have animal meat.
beans and rice for the poor and famine stricken, salt and pepper is optional.

I’m not picky with food but I only weigh 130lbs at 5’11, I don’t get hungry often and usually just have the first three options.
