        Clashing textures and wilted salad. I wasn't trying to criticize. I was assuming he knew a lot based on how it was plated.

        I really hate the use of potatoes under there for some reason. Maybe less sauce and risotto or Israeli couscous? There has to be a better starch for texture and taste for that combo.

          Yes that’s the goal. Crispy skin, fatty fish, crispy potato on the outside, tender in the middle, crunchy herbs, saucy sauce.

          I was heavy handed on the olive oil in the herbs, I’ll give you that. Definitely not wilted though.

    Very nice anon.

    I used to make salmon in the pan but the absurd amount of rendered fat and fish smell that infested my house for a whole day after cooking it convinced me to just throw it in the oven or pressure cooker or even sous vide.

    It’s not as tasty or as good looking but for me it’s good enough.
