      It's either lean veal and pork fatback or in the cheaper version just pork. It's only lightly seasoned with salt, white pepper, fresh onions, parsley (visible as the green dots), mace, dried ginger, lemon zest and cardamom. Weißwurst is similar to an only lightly seasoned Bratwurst but the consistency is squashier. I don't like them.

      Why them weenies so white?

      White meats like veal, pork or chicken will be white if finely minced and boiled. The high fat content and added ice will also help with it.
