    Real schnitzel is made from veal, fried in lard and the breading has to puff up, so there's a pocket of air between breading and meat. No wonder people like katus more, if that thing on the left is what they think of as schnitzel.

    Katsu is just a luxury version of Schnitzel as it is usually made with filet or loin and panko.
    A Schnitzel can be any shitty cut pounded into oblivion so it becomes flat & tender. Also the breading is traditionally made with whatever leftover bread you have.
