    is a carbon steel worth getting? I have a stainless steel and a cast iron that I love along with a cheap nonstick that i'm not so in love with.

      Carbon steel pans are thinner and transfer heat faster than cast iron. Cast iron will retain heat better. Different pans for different uses.

      Carbon steel heats up more quickly, and cools down more quickly. Cast iron heats up more slowly, and cools down more slowly. Sometimes one is better than the other.

    I think I'm gonna move from non-stick to carbon steel. I would use cast iron but I don't want to wait for it to heat up and don't like the rough surface.
