Pita bread, I have a hard time getting bread to rise in general but getting those pockets consistently is really hard.

If you're baking them, make sure you start with a preheated baking sheet. They need to start on a hot surface. And don't roll them out too thin.

I talked about you, moron, for le epic ironic race bait nonsense

Are you basically saying you can't make your own hummus wraps?

You also can't make your own pancakes and crepes?
I have made pancakes with the mixes but when I made it from scratch it tasted terrible.

If you're used to mixes, you might not be adding eggs. Pancakes absolutely need eggs.
Also you might be adding too much baking powder.

Can't make an omelet for shit. It always breaks even when not adding any fillings. Have worked as sous at a few restaurants before I stopped cooking for work, but I remember being really anxious that eggs would be brought up in an interview or I'd be tested on it. I can make eggs in any other way except omelets.

Your bottom is setting up too hard, lower your heat. And you should be folding before it starts to set on top.

I have tried and failed making a proper apple crisp too many times to count

You see, the apple crisp that first got me hooked was the one they served at our high school lunch cafeteria. The exterior crust had an acceptable amount of crunch when biting into it but it was still soft and almost cakey chewy, not exactly sure what is used on the crust but it looks like a mixture of oats and other crumbly things. And of course sitting beneath are super soft melt in your mouth cinnamony caramelly apples. And then when you add a little scoop of vanilla, gosh dang.

But anyway, every time I make it, (and I will admit I am always using this box mix from Walmart, pic related) the crust always comes out dry (also the box mix crust pack doesn’t look like it has oats in it) and like the consistency of a shortbread cookie which is not what I want, and the apples I use are always firm which is not the texture I want.

I hope one day I will make an apple crisp they way they used to serve it at school.

Make your own topping, it's not hard. Just a mix of cinnamon, oats, brown sugar, and flour.
If it's dry, add more brown sugar.
I almost guarantee whatever cafeteria you got your crumble from used canned apple pie filling instead of making their own, so try that. If you insist on doing it from scratch, cook it at a lower temp for longer so the apples can cook fully before the top sets up. Or even cook your apples with brown sugar in a pan first.

Every time I try to make frosting from scratch and then frost a cake I feel like I turn into a super autist where I ree at everything until the process is done and I have to resign myself to the unsatisfactory result.

    Sandwiches.
I have never made a sandwich at home that was greater than the sum of its parts. Half the time I think I should have eaten the ingredients separately or as a salad with toasted butter bread on the side.
