      All the videos are extremely incorrect because he doesn't factor in freshness, cooking method, where the ingredients come from etc. If ALL you eat is shit from walmart the lists are fine, but for anyone buying produce locally or local raised meat need to talk to the owner and do their own tests to see. The problem with hyper analyzing this sort of stuff is that in doing so, you pretty much have to acknowledge massive variance based on how the food is produced.

      like for exmaple, didnt watch the vid you posted, but does he talk about how store bought, pasteurized sauerkraut is basically zero nutrition, whereas homemade is a good gut bacteria A-bomb? Storebought could easily be considered healthy in that it ahs nothing bad in it, but it'd have to be A or B whereas homemade would be SSS class.

    Missing the best middle eastern sauces. Hummus is good, but babaganosh, muhammara and zough balst hummus out of the fricking water any day.
    Also missing some good French sauces like bearnaise and cafe de paris. Jalapeño relish is also amazing on pretty much anything

    Less sodium kikkoman's soy sauce is great as a lazy au jus to dip some foods in.
    Ketchup works similarly on foods that won't tolerate straight up liquids.
    I don't need high fat condiments since I cook most of my foods in lard or crisco. I use lard for veggies and crisco for mammalian or fowl meats.

    French's mustard. Yellow or spicy brown is fine.
    Cholula is good for most spicy needs. It's not that hot, but it has a nice pepper flavor.
    Idk. It's a hard question. Olive oil and balsamic vinegar are also pretty good.
    Honestly grey poupon is powerful for pork chops.
