        Pork tenderloin green pozole. Jalisco style made with plenty of serrano peppers in the "chimichurri" base: I don't know the term for this paste like stuff. I have no idea what pic related is made with. I haven't taken any pictures of my pozole but I will next time.

        With masa harina, but make sure not to add it directly to the chili, then it'll clump up. I made that mistake once, make a slurry then add that to the chili.

        I've tried 5 different types of masa and that is by far the best for tamales. It allows you to use less water for moisture and more fat instead because the grind is bigger than other brands.

        If you mean it was too thick and dark (kek), there are like 7 main types of mole and infinite subtypes. Jalisco is thinner, spicy, and red.

            No my mother's side is just from the area and owned vast swathes of land which they donated to various churches. You're not wrong about my dad being in the military. He was actually stationed in Germany before I was born and finished his service prior to my birth. It had zero impact on where I was born. He met my mother in the Waco area before enlisting and she went with him to Germany then they came back. You're quite assumptious.

    I had jerkied Albatross which was really good. Also had fried pork placenta with chives and deep fried stork cloaca rings. Also had butter dipped live mojojoys which taste kinda like shrimp and garlic bread. Menudo is really good too.

    I'm of mexican descent and I honestly have no clue. I've never eaten 'real' mexican food before, just tex-mex experiments. The best answer I can give is ground beef mixed with spicy mexican rice, that shit is addicting especially if it's fresh off the stove.

    is this pollo en achiote? my aunt used to make this (rest in peace) and I've been craving it for years now. I've bought the achiote paste and tried to make it myself, but I'm missing something because it just comes out flavorless/mild, definitely not the sharp acidic achiote I remember. Anyone got any good recipes for this?
