Sautee potatoes. Boiled egg yolk in dressing.

Do I have to strain the boiled egg yolk? I've been wondering about trying a sauce gribiche
just sautee the potatoes from raw?

What kind of potatoes do you use?
How do you cook them, and
          What's in your dressing?

I've been trying different ways, usually I make mayo with egg yolk and neutral oil and lemon juice

I mean, like, just make a couple of boiled eggs and eat just the whites and mash up the yolks in you "salad dressing" until it gets nice and fluffy and creamy instead of just oily mano on potatoes.

Start the potatoes whole and unpeeled in cold water and gradually bring to a simmer and simmer until cooked, then remove, shock in iced water and peel skins. Roll in oil and bake at 425 until the outsides are dry and a little browned.
I find this greatly improves the taste and texture.

its a salad on a roll but you wouldn't bat an eye if i cut the bread up and toasted it into croutons

for salad or soup? for soup i use a stale baguette then bake them at low temp to dry them out further then coat in olive oil and then bake at a higher temp.
They won't get soggy in soup right away like normal croutons but they are way too crisp for salad

              you talambout crostinis?
I used to make sheet trays of those all the time at an old job for charcuterie boards, and I can see how that would be 11/10 in soub.

I have never made them before but i'd assume you want to start with a soft dense bread, cut into cubes and toss in a little oil with garlic powder, oregano, basil and salt&pepper then bake at a lower temp like 350f to dry them out and pull them out just as soon as they brown and get them on a cooling rack.
the difference being you really just want to dehydrate them unlike soup croutons which use a little more oil and you're going for a hard toast
                i think?
