    We eat it with polenta and greens. In the late summer/early autumn, it's great with squash blossoms. The sweetness of the flowers makes a nice counterbalance too the sausage's iron-y flavour.

    the boudin i buy (in france) are too moist and are without body. they have the texture of wet bread. is that normal? its too liquid. am i cooking it wrong?

      Blood sausage dinner is CANCELLED because they were sold out 🙁

      I had wildly different sausages, most as they should be (OP), but some were more like jelly. I usually just fry them a bit or nuke 7 minutes in the airfryer.
