    Fruit is top tier decadence. Embrace ice cream as a food that makes you feel whimsy, don't put alcohol on it! Cherries are the classic choice (make sure to get some of the juice that's in the jar) but strawberries, bananas, and even pineapple are are damn good too. Chill some grapes in the freeze for 20 minutes before putting them in the ice cream. I don't think there's actually any fruit that's bad with vanilla.

          I don't disagree that putting some cinnamon on vanilla is nice, but cinnamon ice cream should really be made on a full vanilla base - just with cinnamon. Make sure it's a cinnamon cassia mix to get some heat and some aroma - it's very good.

              Yeah there are quite a few variables you can play with. Ceylon cinnamon will give you the aromatics and subtle notes, cassia gives you heat but I also think it gives you the clearest 'sweet' cinnamon taste when well steeped. So you're always having to make a trade-off between complexity, intensity and sweetness.

              You also have to decide some ratio of ground or powdered cinnamon vs. whole pieces that you steep and filter. You need very finely powdered cinnamon otherwise it will be slightly gritty (and insolubles are always very noticeable in ice creams as they leave a residue when they melt on the tongue). But this also means you have a flavour progression of sorts; you start with the infused flavour, but you tend to end with whatever leaves an insoluble residue which will naturally coat your tongue as you eat.

              Getting something that suits your taste is quite fun, I tend to go for about 70/30 cassia to cinnamon in large pieces (sticks/back pieces) in the base, which I leave in during cooking and curing (so until it's cold enough to freeze) then filter out, and then about 10g of cassia powder per litre.

                sounds like you got your method down
                and I would prefer a little grit from the cinnamon myself
                same goes for vanilla bean ice cream, I like to feel the pieces to some extent
                and if I were to do this myself I would mix a wide variety of things together into a special blend
                there's potential here, but I am not rich, and it will be nearly a week before I am able to get more food again
                maybe in the future I will try making my own recipe
