        He used the ridiculously high prices before then for similar reasons. He'd be flooded with too many customers otherwise.
        Also used to be you had to get recommended to him by a concierge at a fancy hotel to be able to go there and pay that price.
        I don't think he wanted the money. He just had way too much demand and needed a way to cut down how many people got into his tiny understaffed old school sushi stall. Otherwise he'd either need to turn his place into some shitty gigangtic meme restaurant and hire a hundred workers (unthinkable with how much he feels the need to micromanage training anyone working for him) or he'd need to kill himself spending 100% of his time serving an endless line of customers.

      Probably just like in the US and every other country there are multiple people with different opinions on it.
      Both people who think all Japanese sushi chefs have a bunch of rules about how to eat that they take very seriously and people who think no Japanese sushi chefs are like that are wrong.
      Jiro in real life actually is someone who'd get pissed off if you didn't eat his sushi the right way. It was in that original dreams of sushi documentary to some extent and also the reviews people have written about eating from his sushi stall mention it e.g. he expects you to eat each course of the overall meal immediately after he serves it to you because he thinks he's got the fish at the perfect point of deteriorarion before going bad where it tastes the best and also he has the air conditions and temperature exactly how he thinks is best for that moment. Not something all Japanese guys do with sushi but that one sushi chef does it.
