    my wife is vegan and I have tasted a lot of vegan 'alternative' foods as a result. some are genuinely very close to the real deal, particularly vegan 'meats'.

    vegan cheese, however, is unmitigatedly shit.

    even vegans will admit to this. they say that new vegans should just not eat any 'cheese' for about 2 years from when they last had real cheese, in the hope that their palates will have forgotten the actual taste of cheese.

    it's vile muck. for non-vegans it's practically assault. there is no good vegan cheese.

      Funfact: The german equivalent to the word dick cheese is Eichelkäse, which translates to Acorn cheese (acorn is what the tip of the dick is called in german). A clueless vegan would actually really look for that nutty alternative to real cheese kek

            Lactovegetarians won't necessarily eat animal rennet cheese since you need to slaughter a young calf and get the rennet from the stomach. Also it might just be easier to get the rennet from bacteria sources than one of the calf stomaches.

      Large scale chicken and cow operations are horrible for both the animals and the humans working on them, I knew a vegan that got eggs from a person that has chickens on their backyard but had to drive two hours to get them, it's hard to source these things in the city.

Fake meats have gotten better, fake dairy is passable (plus you can just get lactose free milk), but vegan cheese has always been disgusting trash. Welcome to your new life. Sorry

    I make a great bleu cheese with:

    Soaked cashews
    Miso
    Lemon juice
    Une Plum Vinegar
    Nutritional Yeast
    Salt
    Spirulina powder

    That's it. I blend all but the spirulina, then take a teeny - tiny bit out to mix with the spirulina (This will later get folded / mixed in)

    Take the blended mixture, roll into a log, chill for a few hours. Take out and mix in the spirulina & cashew mixture into the rest of the log. Chill again. Done.

    Idk but a local supermarket was selling vegan microwave mac and cheese for a dollar per tray yesterday BOGO. They have strange aftertaste, likely from the addition of garlic and onion powders which I don't use, but they're surprisingly not shit. Strong Roots brand, if anyone is interested.
    I'm not even vegan so if I'm telling you it's pretty good, it's pretty good. Don't expect it to be 1:1 with either homemade or non-vegan macaroni and cheese, though.
    What surprises me most is that it's not saltier than a motherfricker. Vegan cheese stuff tends to be ungodly salty
