I only drink the wine I used in the recipe.

Yeah but I think he means for when that bottles empty and it is time to serve.

I've never used more than a 3rd of the bottle in a recipe, so there'd be enough for at least 2 glasses to serve.
if I need more, just buy 2 bottles.

Depends entirely on kind of pasta dish you're having.
Rich, beefy, meaty taste, with big tomato depths and drowned in olive oil?
    Red wine.

Fish or some other delicately flavoured dish, lemon, herbs, white sauce, light vegetables etc.?
    White wine.

Even that's not exclusive, there are lighter reds that pair with fish and more bold whites you can pair with beef.

    Port.
    First you make the pasta.
    Then you drink the port.

Autistic wine matching is a thing, sure. But what really matters is making sure every guest is offered least 2 glasses of it minimum. The more the merrier, key to a good function is getting amazing people together and getting them blasted together.

I don't know what's sadder: thinking that poisoning yourself and others is necessary for a gathering to be "good," or that it apparently takes two glasses of a 10-14% concentration of that poison to get you "blasted."
