        Not really true for the UK anymore.
        KFC isn't anywhere as good as it used to be at least, and their menu is pretty expensive for what you get.
        Additionally, the UK has popeyes now (although even more expensive, I've heard good things) and a myriad of local chicken shops wherever you go, which are much nicer.

          Literally just had Popeyes from the one in Brighton. The chicken burger was top tier, really good, the wings and chicken pieces were much crunchier than KFC but maybe not as tasty and smaller, gravy was decent but the taste took a bit of getting used to. Didn’t have the fries. The burger was expensive for the small size so I’d put it overall on the same level as KFC which is cheaper but worse.

      Depends on the style you're going for and if you're looking for battered, floured or breaded. For floured, for example, you want to make absolutely sure you double or even triple dredge it before frying which means waiting for the seasoned flour to hydrate with moisture leeched from the chicken by the salt to mixed into it. For batter l, you want to work fast as frick to get the chicken dunked and into the fryer. Breading depends on the sort of breading you're going for, panko, regular breadcrumbs, coconut etc and it's too much for me to want to get into in detail.

      I worked at a bojangles in early 2020 because I got fired from my last job. one day I came in for some wings and he asked if I was there for the interview. (I was wearing a collared shirt and slacks) I said yeah and came back a few hours later for my first shift. Only white guy there, it was a really interesting place to work at the start of the pandemic, I quit because two homeless dudes were doing heroin in the bathroom.

    I'm in Canada and the best fried chicken I can find is at the grocery store. It's really good and juicy , just enough grease. Local KFC used to be decent until renovation last year. I dunno if the owner changed, but the restaurant looked like it was stuck in the 80s until February.

      You can but just don't try to recreate the fried taste and texture, you'll never get close using an oven even if you use the baking soda or oil tricks on the skin. There's plenty of decent flavors for roasted chicken though so just do that
      >Persian joojeh: saffron, lemon/lime/or verjuice, onion and yogurt (and turmeric to cheat)
      >Cantonese: 5 spice then brushed/basted with honey/maltose (marinate in shaoxing/dark and light soy sauce to be high effort)
      >texas/cajun: just buy or make a rub
      >Latin: Buy the Chef Merito or Goya marinades, then look up a real recipe to get close to what you want (citrus-y)
      You should ALWAYS brine beforehand. Dry brine with either salt or MSG (all major chains like KFC, Chick-fil-a, Krispy Krunchy etc use MSG) or do a wet brine. I think wet is unnecessary with wings since they're so thin dry will penetrate easily. Add hot sauce if you want. If they dry out, brush with oil or butter or maybe your temp is too high. Can't say more unless knowing what you want specifically.
