the only real reason to have induction is to boil a giant stock pot full of ice cold water in 30 seconds flat. for everything else it's just a >skill issue

          >skill issue
seems good enough for thomas keller

As many easily replaceable components as possible. I hate my glass cooktop because the pinholes in the knobs are torqued out from the previous owners so they have a lot of play, making it annoying to tell if a burner is on high or low.

Man these electric stoves cannot cook for shit, I stayed in an airbnb with my gf and her friends last year and it took me almost two hours to cook a kilo of bacon of and eggs which could’ve been done in like 30 mins if I had had my cast iron skillet and a gas burner, even a fricking esbit stove can cook faster than this shit

      > almost two hours to cook a kilo of bacon of and eggs

You would never achieve the heat necessary for wok cooking

I have a 30k btu wok burner but i only use it outside because i dont like piping explosive asphyxiants into my home

Traditionally most wok cooking is done outside yes and now you’ve convinced me to want to install a commercial kitchen in my house

I can but I own an actual jet burner that's over 120k btu.

The thumbnail for OP's pic got me thinking, anyone yet to try and invent a big blank stove top where instead of having a few designated squares the stove top just recognizes where you've put stuff and heats there, be it a shitload of small pans or one big one.

No idea how it would work, something something induction .maybe?

With everything else we've got that shouldn't be too sci fi.

I have a gas stove. I love my gas stove. A gas building was a non-negotiable when I was shopping for a place

When I say this on the internet I get a bunch of reactionaries screaming "trump lost" and generally calling me a chud and a conservative. I'm the kind of guy trumpies want in a mass grave. Non-white, non-heterosexual, reads and owns books other than The King James Bible. But none of that matters to you people because of my cooking preferences

Gas stove people are truly the most oppressed race

induction is better than resistive which is better than gas.

gas is slow and uncomfortable and any disadvantages are just skill issue or poor cookware

it's trivial to deal with thermal inertia. want to cut the heat immediately? pick it up you uwu smol bean

for the extreme edge cases in which gas is legitimately better, a standalone propate or butane burner will work just as well. No need to make everything else slow and uncomfortable.

i'd hate to make any kind of reduction over a gas burner

i don't touch any kind of added fat, so my stove is rarely used for anything but heating pressure cookers. i've found i can use direct electromagnetic heating (microwave/infrared) to get caramelization without needing to eat thermal interface material and be fat and pimply and bald and feeble and limp dicked

Do you also get angry that people with automatic transmissions are allowed to drive?

I'm long past the point of getting angry at stuff like that, but I do believe that if you lack the extremely basic level of coordination to operate a stick shift, you need not be driving. Same goes for the people who believe they can't avoid crashing into pedestrians and cyclists. Remember that 80% of motorists believe themselves to be above average drivers. And when they inevitably kill someone we shrug and go "it was an accident, who could have foreseen this!?!?!" and they are allowed to continue on their way

At any rate, if you felt personally attacked, by this or my other posts, then I hope you appreciate the wisdom you have been exposed to on this day
