      A good paella is the best rice dish. However, it is really hard to find a good paella these days, even in Spain where I live.

      Second

      I fricking love rice, I eat it several times a week. But there's a huge power gap between those two dishes done well vs every other rice dish. Notable though are biryani, rice pilaf, risotto.

      Also yup, but I've never made it with chorizo...always andouille. I love chorizo though, so maybe next time I will.

        I simply can't find andouille here in Norway, so that's why I use chorizo. But chorizo works really well.

            I'm sure there is some way of getting it, I've seen it at restaurants. But I have not been able to find it in any stores, the closest I've gotten is a local butcher and sausagemaker who has a sausage called "creole chili sausage" which I have used for making gumbo.

        The rice is actually cooked with chicken broth that has been cooked with ginger, scallion and garlic.
        Also you eat it with chilli sauce & soy sauce.

        Hell yeah brother, a thicc chorizo is the best. I also like to add about half of the beans a couple of hours earlier than the other half, so that you get both the mushy bean consistency and intact beans.

            Always dried beans. They taste better than canned and are also so much cheaper. Also, as I said earlier, adding beans at different times gives you different texture to the dish, and with pre-cooked, canned beans you don't have that control.
