your thyroid will shut down from iodine deficiency. rice and beans is a good way to get cheap protein but it's not a nutritionally complete diet.

the only way you can get sufficient iodine is from seafood, milk or iodized salt. the tiny amount of micros from seasonings is negligible. instead of buying seasonings you'd be better off buying a couple litres of milk

I use iodized salt so this isn't a problem. No one eats rice and beans without salt and cumin.

      Anonymous

I checked on this further and according to a chart for horse nutrition I found feed corn contains roughly 1500 calories per pound. Assuming you need 2000 calories a day, a sack of feed corn puts you at exactly the minimum calorie amount over a 30 day period. Checking prices at the local feed store, it's actually $10 for a sack, not $40, so it's even cheaper. Just don't forget to nixtamalize it so you don't get pellagra!

You can't just take a food pill. Multivitamins are to cover temporary gaps in nutrition, not be part of your actual diet. You have to eat food like a normal person eventually or your body will just go to shit. You shouldn't be eating worse than a medieval monk lol

Medieval monasteries usually owned a large amount of the surrounding cultivated land, they also often had serfs and oxen to do the work for them. Additionally monasteries would often receive donations from rich noblemen and merchants, and monks would often earn some money by selling books (almost all scribes were monks, and if they were illuminated manuscripts the price could be very high) as well as by working in the skilled trades (many monks were trained as craftsman before they joined).

    >Can I just eat brown rice and a multivitamin or do I need more than that?
An adult probably can live on that for a while. It would be boring as heck, but it would be possible. Longer with some salt too.
Longer term, you also need protein. Not huge amounts, but some because you don't have perfect retention of amino acids. Some fats would also be useful. The occasional fried egg would cover both of these and fried eggs are pretty cheap and easy to do.
It's a good idea to also add something flavorful so that things don't always taste the same. Spices are usually very high intensity flavorings so their cost can be spread over many meals. They also don't need much storage space.

Masa plus the oil from the bean whose name we shall not say. Masa can get you 10-12 calories per penny. Maybe even more calories if you buy it in bulk from an ethnic market. Forbidden bean oil gets you about 25 calories per penny. You can make empty tamales with a day's worth of calories for a couple of dollars. If you're feeling spendy, and want something with a bit more rounded nutrition, you can add beans, rice, and other inexpensive ingredients to wrap in the tamale under still be around $2/day.

My friend ate a diet consisting of only chicken, rice, broccoli for a year and afterwards he developed a weird allergy to eggs that he never had before. Based on that anecdotal evidence alone, I wouldn't just eat the same exact thing every day.

You need a variety like beans, wieners, potatoes with skin, milk, brown rice, drumstick chicken, serranos, corn bread, egg noodles. all of this shit is dirt cheap and it won't drive you insane nor destroy your gut.
