baking isnt ideal but im sure if you just throw them in at the end when its basically done, just to get it going, and then take it out, mixed in with the freshly done veggies, the heat of the cooling down veggies will cook it in exactly one (1) minute

Saute garlic for 5 minutes on low
Raise heat to medium
Add spinach and some crushed red pepper flakes
Salt and pepper
Cook for about a minute
Done
Easiest is just to throw some olive oil or butter in a pan on med heat, add spinach when it melts and saute for a minute or two, though
