    I can never cook ground meat right in spaghetti, it always turns into little chewy rubbery bits. It tooks years before I discovered just using meatballs instead, and if I want the ground meat experience, I'll make the meatball mixture and use that instead. Far superior than just using straight ground beef and frying that in the pan like most recipes tell you to do.

      The problem is you're attempting to cook your ground beef and then instantly throw it into your sauce and have it all ready to eat in 20 minutes. If you want a restaurant-tier meat sauce, you have to cook it for several hours in the sauce and use a bit of red wine.

    I make spaghetti with ground beef all the time. I just cook brown it in meatball or larger sized chunks and only break it up closer to serving. keeps the meat tender and delicious without becoming rubbery. Skill issue.

    Prefer ground beef to meat balls. The meatballs make me think too much about ratios and how much I should be eating per bite, should I cut them in halves or quarter them? It’s too complicated

    Turkey, actually, although I haven't tried chicken or fish. Hell maybe imitation crab would work instead of shrimp in scampi

    In my experience ground pork is way higher on the "chewy rubbery bits" scale than ground beef, even though beef turns out tougher. Turkey has a bizarre interaction with tomato and basil that makes it almost inedible to me

    It's meatballs, free
    Beef is a mediocre complement to spaghetti but at least when it's ground it's just a texture that adds some distinct flavor difference any given bite, meatballs are obnoxious to eat (you now need a knife to enjoy your spag meal) and the taste isn't worth it. The spag's better off with a different protein and the meatballs pair way more nicely with something like a somewhat spicy penne

    Now for me? It's chicken or sausage. Hell I bet a breaded fish cutlet would kick ass too
