    extra hot golden curry, hotpot sliced beef or pork(you can use ground beef or pork too but i dont like the texture as much), carrots, potato, onion, grated garlic and ginger, lots of green onion for garnish
    i like to use beef stock, some dark beer, and some strong coffee(i make it in a moka pot), plus a little red miso for some more body and flavour, probably a couple splashes of fish sauce or worchestershire towards the end if it needs a little push
    i like to serve it with rice and scrambled eggs

      What's your favorite Japanese Curry recipe?

      >1 lbs of pork stew meat
      >diced up carrots, onion, taters (optional)
      >grated garlic and ginger
      >S&B curry powder
      >chicken stock
      >kombu
      >corn starch to thicken, not a big fan of using flour

      >brown the meat in a deep saucepan, remove
      >throw in onion and let it sweat to deglaze the bottom of the pan, throw in the other veggies till soft
      >throw in the meat and the curry powder
      >fill up with chick stock and throw in a small sheet of kombu
      >let simmer for a couple of hours
      >apply a cornstarch slurry to desired viscosity
      plate and eat, but been seeing vids where they blend the veggies with the roux like mixture so might wanna try that later

    I collect whatever diarrhea I had last night as a base, like all good curry bases. This provides easily absorbable nutrients and a strong flavor base. I then add whatever I can pick out of my carpets as seasoning and I put on top of mashed potatoes

    I just use the S&B powder. The stock you use really matters and is vital to the flavour, as I tried a bunch. As expected, real chicken juices is the best. Bettter than Boullion is a decent sub when you don't have real chicken though.

    Its all the same. The curry covers all the taste. Carrot onion celery potato of any kind all gets covered up by the brown brick. Other condiments like goygauce just make you thirstier.

    I posted it a while ago but I like to do it a little different from the package. First I'll spend a couple of hours making a batch of caramelized onions. Once those are cooked down I'll pull them out and fry up 3lbs of various ground meats. Usually at least one lb of sausage, then lamb/beef/chicken/pork. Once that is all fried up I'll drain most of the fat but leave a little and add the onions back and toss in the curry and water. Also I like the Vermont curry with apple. Using ground meat it turns into more of a asian sloppy joe instead of the typical soupy curry. Afterwards I'll add some Cholula or whatever hot sauce I have on hand to give it a little kick but nothing too crazy. Put that shit in the fridge and let it sit for at least over night. The next day scoop out a big spoon of it and heat it back up, you'll probably need to add a little more water. Then put that on top of rice or noodles or a hamburger bun. Also great with scrambled eggs or in an omelet.
