    They're poisonous and shouldn't be consumed. Any part of a plant that isn't ripe fruit contains anti-nutrients which is just a fancy vegan-ified roundabout way of saying that plant toxins are present.

    Boiling reduces these toxins but doesn't completely eliminate them. From an evolutionary perspective it makes perfect sense for a plant though. Seeds are vital to plant reproduction and you really don't want anything eating them.

      Antinutrients aren't the same as toxins. They're just substances that bind to some nutrients. And there is some evidence they might not be 100% bad.

      There are fruits that are literally poisonous, along with various other things in most fruit that could be considered an antinutrient as well.

          Now that I've typed this, it sure does sound pretty gay. But there are vast numbers of legumes that are not standard cultivars that wildlife eat regularly due to the sugary or fatty nature of their coatings. Green beans are a good example of one that we bred to emphasize this. Almost all wrapper, not much seed. It's true that seeds like apple, squashes and melons are coated in a tiny bit of poison, but the fruit enticement is already there, and it also serves to move the seeds through digestion quick enough to not be ruined.
          Birds eat truckloads of seeds along with the insects that predate the plants themselves.

    Refried after tenderizing in my InstantPot pressure cooker. They are then blended and cooked with US Dreams lard, veg, broth and spices. Then blended again. Crack.

      I've also had great results from scratch cooked pintos refried with butter.
      I don't know what the name for them is, but I also made 3"x½" "Pucks" from masa harina for corn tortillas, then topped them with the beans, cheese and topped with a fast and dirty, homemade pico de Gallo.
      I'd often make a slow-cooked pork or beef to shred and put onto them before the cheese.
      3 minutes under the broiler...Cheap, filling, delicious.

          Yeh, I been called a Pl*bbitor for poasting it, but I'd seen it in fridge magnet form in 1996.
          Of course that was before we knew about the hazards of oxidized PUFAS, but I can't think of a time when I didn't prefer tallow or lard for frying or baking.
          Used to have a fry Daddy 1986 model growing up, worked GREAT.

      Farting means your body is having trouble breaking down the sugars. If you eat them regularly then the bacteria in your digestive system should adapt and get better at breaking them down. I don't really fart much after eating beans anymore.

          They're not non-digestible. Farting is literally bacteria breaking down the sugar and causing gas. It just happens at the wrong part of the digestive system. If you eat it regularly then your gut flora adapts and will start breaking it down more efficiently, before it gets to the point where it will cause gas.

          Fiber is indigestible but bacteria can still break it down. Half of your poop is bacteria, it's not all food. That bacteria breaks down things that we can't.

            holy fricking shit you are moronic. We don't make the enzymes to digest oligosaccharides. They are not digestible by human beings. Gas is caused by the bacterial fermentation of the UNDIGESTED carbs. You eating them more is not going to allow you to "break it down more efficiently" whatever the frick that even means. Furthermore studies show that vegans fart way more than non vegans and under report farting meaning they just accept it and notice it less. The entire getting used to it thing is a made up anecdote posted to blogs online; It has no basis whatsoever in reality.

              Hmm. I guess I was wrong about it being digested better further up in the digestive system.

              The only thing that makes the most sense to me is that the bacteria adapt to the oligosaccharides and start to produce more SCFAs instead of gas. Kind of like how baker's yeast produces more gas to give dough more lift while brewer's yeast produces more alcohol. Does that make sense? Obviously gas isn't really much benefit to the body so it would encourage fermentation to result in SCFAs which are usable by the body.

                na the bacteria can't adapt but theoretically you could have some other bacterial colony take over that doesn't ferment the oligosaccharides but that is a big what if and may have other consequences on digestion of other foods. You would have to have that other bacteria there and it would have to do what you are saying. Also bacteria and the body don't work together by doing what what benefits the body the most. If you have a gut seeded with horrible bacteria and you keep feeding them they will keep proliferating.

                Another huge issue is that pulses are pushed as a health food so most research into them has a predetermined result. The powers that be want people to stop eating meat.

    I just boil them in stock and portion them in sandwich bags before freezing and use them like canned beans, then I can just saute some bacon and onions or something, throw in some chicken stock and a frozen bag of beans and I got dinner in 15 min.
