We work with Americans and Korean at my job, we usually take them to a new restaurant when they come and so far they say that they have had a great time. Although, I am sure a good part of why is because we are just such great hosts.

There's tons of Japanese and Chinese influence in Baja and Sinaloa. But for me, Baja seafood is basically sinaloan but less "naco".
Baja had a wave of gastronomic development, a lot of what you see comes from named chefs adapting traditional recipes into something more heute, Sinaloan food is almost entirely organic in how it evolved, so it is more "folk", but last time I visited they were paying a lot of attention in their looks.

Ensenada is seafood paradise. Mariscos barbaroja, la cevicheria, Alta mar, la carreta for restaurants and la guerrerense, yeyos, 240 grill for street food. I'd also advise you go to Valle and try some places there and go wine tasting
it depends on the type. there's places that make them hot which is unique and not as common. but for more uncommon dishes you can also try out:
